Noodles with Tomato Vegetable Sauce

I took a walk down to the local market. I loved the fresh local produce, so I spent about a buck and a half, and came home with a carrot, a green bell pepper, and a small sweet onion. I didn’t have a plan for them, and I didn’t even have any fresh garlic, so I looked in my refrigerator and my cupboard, and this is what I made for dinner.

Well, it worked out really well, so I thought I’d share it with you. I had flour and eggs, so I made some fresh large noodles. I had some tomato sauce, tomato paste, and celery, plus, luckily, a jar of minced garlic. The only fresh herb I had on hand was thyme, so why not? But I also hit my spice cabinet. I made some tomato sauce with all the vegetables in it. I wish I’d had some Parmesan cheese to put on top.

Anyway, this is an example of the kind of quick meal you can make with the ingredients on hand. You should try this dish, because it turned out to be really good! And then, invent some of your own…
